Garganelli al sugo
Garganelli with meat sauce

Ingredients :
400 hg of flour 00
4 eggs
plus Meat Romagna Sauce
Instructions :
To prepare this dish, typical of the our region, you need the proper tool called “pettine” (comb) which consists of parallel threads kept straightened by a small loon; and of a small stick.
After kneading the dough well, roll out a thin sheet and cut it into 6-7 cm’s long squares.
Then curl each square around the stick and push it on the comb, the result will be ridged macaroni called garganelli.
Boil pasta in abundant salted water and season them with meat sauce.
