Ingredients :




1 chicken weighing about 1,5 kilos, olive oil, vinegar, garlic, juniper berries, sage, rosemary, whipped lard, salt and pepper

Description :




The term friccò is an Umbrian dialect form of the French fricandeau, which indicates a type of stew, which to be honest has very little in common with this local recipe.




Instructions :




Pass the chicken over an open flame to burn away any residual feathers, wash and cut in uniform pieces. Brown in a frying pan with the olive oil, garlic, pepper, and coarse salt. when the meat is almost cooked through, add salamoia (oil, vinegar, pepper, juniper berries, sage and rosemary): If desired mushrooms, peppers or diced tomatoes can be also added to complete the dish.
