French Roast Chicken

Ingredients :
1 large roasting chicken
2-3 cut up oranges, apples or white grapes
Olive oil to coat
Herbes de Provence and garlic powder
Salt and pepper to taste
1 cup water or wine
11x9 pyrex baking dish

Description :
....This is a ’long roasting’ chicken... 4-5 hours on 275.... It is a ’fix it and forget it’ dinner!
Instructions :
Heat oven to 350 degrees
Clean Chicken and remove giblets (use for making gravy)
Put fruit in cavity, truss
Rub with Olive oil
Sprinkle with herbs and garlic powder, put some carrots and potatoes around if you like
Put Chicken in the oven at 350 degrees for 1/2 hour
Remove, turn oven to 275 degrees
Put 1 cup water of wine in Pyrex
Cover with Foil tightly
Return chicken to oven to cook for an additional 4 hours
Caution: When you remove the chicken from the oven there will be a lot of liquid!
"Platter" the chicken.
We leave the house, come back and dinner is done!
