Green Chili Breakfast Egg Puff

Ingredients :







  • 1/2 stick Butter, melted

  • One 4oz or 8oz Can of Green Chilis diced, drained

  • 1 pint Cottage Cheese, small curd

  • 10 Eggs

  • 1/2 cup Flour

  • 1 pound Monterey Jack Cheese, shredded

  • Salsa for garnish

  • 1 teaspoon Salt

  • Sour Cream for garnish

  • Description :




    Irresistible make-ahead breakfast or appetizer squares!! A must for all bed and breakfast or brunch menus!




    Instructions :




    With mixer beat eggs until lemon colored. Mix flour, salt, and melted butter together. Add to eggs. Add cottage cheese and Jack cheese and blend together. Stir in drained chilis. Pour into buttered 9x13 pan. Bake at 350 for 45-50 min. until golden brown on top and firm in the center. Cool and serve warm or at room temperature. Cut into 9 squares for entree, or 40 one inch squares for appetizers. Optional to top breakfast squares with a dollop of sour cream and a spoonful of salsa.
