Hawaiian Banana Bread

mini - loaves 6 - 8 slices
Preparation Time: 20 - 30 minutes
Ingredients :
3 c. all purpose flour
2 c. sugar
1 tsp. baking soda
½ tsp. salt
1 tsp. ground cinnamon
1 c. nuts (optional)
3 eggs
1½ c. oil
2 mashed bananas
1- 8-oz. can crushed pineapple, well drained
2 tsp. vanilla extract
Description :
“An unusual combination ~ so moist & delicious and not just for breakfast…”
Instructions :
In a large bowl combine the dry ingredients. In a separate bowl combine the remaining ingredients. Add the liquid mixture to the dry ingredients and mix just until blended. Pour into 5 greased mini-loaf pans.
Bake at 350° for 40 to 50 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack 5 minutes then loosen sides of loaves to remove from pans. Freezes well!!
