The starters can vary from a mixture of meals ( locally produced): toasted bread of all kinds, fresh salad and more sophisticated dishes such as terrine of pheasant or Chianina garnished with onion jam without failing to satisfy any desire.

The first course: Paste, Gnocchi Ravioli and more ( everything homemade) are the highly valued and well coupled with boar sauce, mushrooms, truffles or saffron.Even the simple cuisine of Tuscany sometimes is present with farro soup, ribollita or even pasta and chickpeas, now a rarity.
