Ristorante Don Eusebio

The large vaulted dining room of the old Refectory of the Knights of Malta is the extraordinary setting for the restaurant “Don Eusebio”. Through the large glass window the room looks at the century-old olive trees of the park and on the horizon at the sea and the island of Malta. A painting of XVII century, an antique “madia” and a big “fratino” table complete the furniture of this refined and evocative atmosphere that makes the Guests prepare to an experience back into the tasting of the countryside aristocracy of the Highlands. In summer evenings the restaurant moves to the old garden “Hortus Conclusus” where Guests sit among the flavour of the Mediterranean aromatic plants under the starry sky of these latitudes (the Eremo della Giubiliana is more south than Tunisi).

Originally the cuisine of the Eremo was based on the refined recipes of the Aristocracy of the Hyblean Highlands and on the organic products of the Nifosì’s grounds; then in 2009 it evolved into the one of “Don Eusebio” restaurant. “Don Eusebio” cuisine is the result of the cooperation between Salvatore Mancini Nifosì (who takes care of the family properties and of the historical research on raw materials and products) and Vincenzo Santalucia, a young and talented Sicilian chef: they made of it one of the new and most interesting restaurant of the Island. The selection of raw materials, the the reconstruction and control of the old agricultural chain of production as the grinding in stone mills of old qualities of grain, give Vincenzo Santalucia the opportunity to offer unique recipes for a cuisine which is prestigious but essential with a delicate balance between tradition and evolution.

Don Eusebio restaurant is open all the year, every day. At lunch a light menu is served inside or in the courtyard (weather permitting), at dinner three à la carte menues: Masseria di Mare, di Terra and Antique gourmet are available.

Such a good cuisine of old tradition as the one of the Eremo has to be based on local raw materials. The “masserie” of the Hyblean Highlands are the historical places of this extraordinary production, and for this reason we named our menu “La Masseria di Terra”, different from the one of the sea “La Maseria di mare”. Not only a place of production, the “Masseria” was made up of a large portion of grounds (at least 30 hectares)
