A meal by itself with a glass of wine! Gougère (goo-ZHAIR) is a cream-puff-like savory pastry served as an appetizer in the Burgundy region of France. With the addition of cheese to the top, the Gougère will have a crispy exterior before you bite into the next layer of cheesy pastry. If you are good with a pastry bag, you could pipe the dough into individual puffs instead of a ring.

All the guests seem to love this dessert.. it is like the LBD (little black dress) you can dress it up or dress it down. It is so quick and easy to make, cooks in less than 20 minutes so prep ahead (if you remember, if not no biggie, percolate the coffee and by the time that's done the cake will be pretty much done.) Is best served still warm.

With a last name of Salmon and an abundance of high-quality local fish by the same name, I had better be able to produce some unique dishes with this superior fish. The sweet potato combines so well with the salmon, forming a crisp crust with a little sweetness. The addition of wild Maine blueberries (much smaller and less sweet than those found in other areas of the country) adds a local twist to the dish while fully complementing the fish.
