A stay at Echo Lodge is all about eating fabulous food in the Mustard Seed Restaurant. Head chef David Rice's four-course table d’hote menu leaves you spoilt for choice. Owner Dan Mullane is usually on hand to explain your choices in delicious detail. Much of the produce is home grown—the organic fruit and vegetable gardens are in terraces behind the hotel and the hens in the kitchen garden provide fresh free-range eggs for breakfast. The atmosphere is convivial, Dan and his staff really go the extra mile to make you welcome. Outside diners give a real buzz to the place in an evening. Bedrooms range from quirky country house to elegant suites. There’s a specially designed wheelchair-friendly room. A cute little sauna and a small exercise room are also available. A Thai masseur is on hand so indulge yourself. The quiet village location is well suited for touring the southwest and playing the several surrounding golf courses. The delightful town of Adare is a 15-minute drive away and the surrounding peaceful countryside offers lots of opportunities for horse riding, fishing, clay pigeon shooting, and antique hunting.
