Once a Cistercian abbey, the Château de Gilly is surrounded by an expanse of grounds transected by a web of moats, with origins going back to the 6th century. At the heart of Burgundy, the château guards a location near Château du Clos de Vougeot, home of the Chevaliers de Tastevin. You can drive up over one arm of a moat to the entry, which was magnificently constructed to blend with two wings of the fortification that date back to the 17th century. Beautifully renovated, the interior of the château is rich in furnishings and comfort. Hung between dramatic beams, handsome tapestries drape the old stone walls. Lofty corridors, dramatic with vaulted ceilings and tile and stone floors lead to ground-floor bedchambers and narrow, steep stairways wind up to rooms tucked under the heavy old eaves and beams. For complete privacy and ultimate luxury, request the Pavillion, set on its own overlooking the manicured gardens. Under the old stone arch of the cellar, an intimate bistro now offers wine tasting paired with an incredible lunch menu. Wine is graciously offered at market price. Descend to an underground passageway that leads to the magnificent dining room. Dressed in deep-red fabrics, candlelight, crystal, silver, and heavy tapestries, the restaurant is very elegant.
