Dining at La Locanda del Capitano one enters the culinary culture of Celebrity Chef Giancarlo Polito, who’s philosophy is to recuperate the foundations of Italian culinary culture, designing dishes empathetic with authentic Italian traditions and ingredients, infusing past and present cooking methodology.

Giancarlo personally accompanies clients on guided tours of selected, noteworthy vineyards and olive oil producers.  There is also the opportunity for guests to experience a very Umbrian tradition of *truffle hunting with dogs in the surrounding countryside, plus, Italian Cooking School, and excursions to seek out the very best of Italian delicacies such as farmhouse cheese and home cured ham producers.
