Glenfiddich Distillery, the only distillery in the Highlands where you can see the complete whisky-making process from barley to bottling. (Closed last two weeks of December.) Malt whisky is to Scotland what wine is to France. The rules for production are strict: It must be made from Highland barley dried over peat fires. Water is gathered from streams that have run through peat and over granite. Distillation is carried out in onion-shaped copper stills with the final product aged and stored in oak vats before bottling. A map is available from the tourist office in Dufftown that gives details of which distilleries are open and when.
