Parma is without doubt the city internationally most known for its Parmesan cheese and prosciutto ham. Thirty kilometers from Parma are found the curative thermal waters of Salsomaggiore and just beyond town is the Antica Torre, the ancient 13th-century tower that majestically crowns a hilltop overlooking the gorgeous soft green countryside. The tower was built to protect the cellar where Cistertian monks used to make salt, a valuable commodity, from the sodium rich waters of the river. The hard-working Pavesi family, proprietors of the ancient property and surrounding organic farm, have welcomed guests to their property for over 20 years. The family offers warm hospitality to their guests within the tower where one bedroom with bath is located on each of the four floors. In addition, there are five characteristic suites on two floors in the main stone residence, including a large two-bedroom suite with fireplace, which is ideal for a family. Rooms are simply decorated and have lovely views over the valley. The original barn has been converted into a dining room where guests sit down together to a hearty, homemade, Emiliana-style meal, including fresh pastas, vegetables, meat, and poultry direct from the farm (drinks not included in half-board rate). Amenities include a swimming pool, bicycles, and tasting local produce in the cellar.
